I kind of have an obsessive personality by nature. I’m the kind of person that can totally get fixated on one thing for weeks or months, until all of a sudden I get bored, and then I move on. Example: I usually eat the EXACT same thing for breakfast for at least a month, and then all of a sudden one day I get tired of it and I switch.

It’s just one of my (many?) charms!

I do the same thing with exercise. Sometimes I’m on a total yoga/pilates kick and I will literally want to do it for every exercise. I’ll still mix it up with other things, but if I could choose – I would pick yoga. I’ve also gone through a running phase. And a spin phase. And a Jillian Michaels home workouts phase.

And now I’m on a strength training phase. I even passed up my usual/planned Thursday night BodyFlow class for BodyPump AGAIN. I just was really feeling getting my sweat on!

And boy did I! For some reason this new release of BodyPump makes me sweat in places I didn’t know I could sweat. See, I’m not really a super sweaty person by nature (which is actually not a good thing I learned… I can overheat easily). But this new squat track literally has my elbows dripping sweat. I’m not sure whether I should be grossed out or happy! haha.

Instead I came home looking like a total mess. Working out ain’t pretty, folks!

Dinner

After I got home from the gym, I took Laney for a quick 1 mile jog around the neighborhood. It is HOTTTTT outside! And not just hot, it’s like walking through a swamp it’s so muggy. I’m not a fan of this kind of weather at all. Give me an Arizona dry heat any day of the week!

Dinner was a random recipe I found on Once a Month Mom. Now I’m SO not a super plan ahead freezer meal kind of person, but I just came across this website the other day, and it’s actually really an interesting concept! Especially for those families who are crazy busy driving 3 kids to 100 different practices. It’s something I might bookmark for the future. One day. Far, far away. (don’t worry mom).

ANYWAY, I used the recipe for Sweet Summer Vegetable Enchiladas, but I made a few small changes. The biggest change that I made was using larger whole wheat tortillas and making 4 large enchiladas instead of 8 smaller one.

I thought that this recipe was extremely good, even though it was lacking the usual spice that I like in Mexican food. Next time I would probably add some spices into the filling, because while it was fresh and summery, it was still a little plain.

I also think that you could have a lot of fun with this base recipe – adding in or trading out different summer veggies. Or even roasting the corn before hand (I cheated and used frozen). I will definitely keep this recipe on hand for later. Plus, I now have like 3 meals worth of leftovers – WIN!

Now I’m off to go celebrate the fact that in EXACTLY 6 MONTHS I will be marrying my best friend! ahhhh!!!!!

I am so incredibly excited, but there is SOO much left to do!

I’m trying not to stress though – because I get to spend the rest of my life being a total goofball with this guy.

    Your engagement pix are so cute!! And I just discovered Once a Month Mom yesterday! I can’t remember where but I think she guest posted somewhere and I just read it. Pretty cool concept but I’m with you- I’m not a plan ahead and freeze kind of girl..yet. The recipe looks great though!

      Thanks!! We got these done a few months ago by Chris’ stepdad for our save-the-dates and I love them. They are so us! haha. We’re getting official ones done next month, but I dont know if they are going to top these!
