Special Dinner Plans

I have to say that for a Monday, today ended up being pretty good. Work was pretty much non-existent. Thanks to the storms today our internet (and thus our entire email/records/paperwork database) was out, so pretty much nothing was accomplished today. But I did manage to catch up on all of the blogs that I missed out on this weekend!

Priorities, right?

But I had special plans when I got home. Important enough plans that I decided to completely ditch out on the gym for a special dinner.

A homemade meal with this guy.


Yup, Chris is hanging out with me until tomorrow when he has to head back home for his trip to Ireland. Yea, I feel REALLY bad for him too…


Tonight, we decided kind of on a whim to make fajitas! We kind of made it up as it went along, but it actually turned out extremely delicious! Our spread included chicken strips, peppers and onions, refried beans, homemade guac, salsa, greek yogurt, and spanish rice.

For the fajitas, I started by cooking some chicken strips on the stove, with a homemade blend of fajita spices.



I used these spices for the blend: garlic powder, onion powder, cumin, chili powder, red pepper flakes, black pepper and salt. I just kept adding to taste. I grew up on Mexican food so I tend to like my food spicy, but even this didn’t turn out spicy enough for my taste. But definitely something you could play with.

After the chicken was cooked, I removed it but kept the leftover liquid. I then cooked the onions, and added frozen tri-color peppers after several minutes.


Once that was all cooked up, I plated everything buffet style on the table so we could pick and choose!


I pretty much piled my fajita with everything, to the point that it almost wouldn’t close. So after about 3 bites I lost most of it and ended up eating a lot with a fork. I then went back for some seconds of a few of the parts, just because they were so delicious.

And now I have a TON of leftovers for the week – double win!

The rest of the evening will probably be spent like this.


I’m thinking he likes his new toy…

And I can’t wait to be able to play with it too!

      The only part that stunk was all of the dishes afterwards!!

    Wowwieiee Ireland?!! I’ve always wanted to see Ireland~;) And I love anything Mexican (okay, what food do I NOT like? haha) And lots of onions is my fave topping for a fajita. I always try to make everything out of scratch, including spices and such. Have a beautiful day! 😀

      I know – I’m super jealous too! Haha, and I’m right there with you, there are very few foods I don’t like!
