Five Favorites Friday #12

Happy Friday guys!

Luckily this week has gone extremely fast for me, probably due to the excitement of my new job. But even so, I am very excited for the weekend even if it’s going to be a busy one!

Chris and I were just talking about how it would be so nice to just have a few weekends in a row at HOME so we could get some house stuff done. You know, like unpack the room full of boxes and wedding stuff that we still have in the basement. From November. Whoops.

Maybe someday we’ll get to them! Maybe.

Anyway, it’s Friday, and you know what that means! It’s time for a Five Favorites Friday – where I talk to you about 5 random things that I’ve been loving this week.

1. Favorite New Resource: Fitkit.me

I had never heard of fitkit before they contacted me to do a guest post for them. But after doing a little research on their website, I was very intrigued by all of the resources that they have available.

Not only does FitKit have a nutrition and vitamin side of their company, where you can take an interactive quiz to get a personalized vitamin regime (which I think is super cool!), but they also have a blog full of tons of great tips, workouts, recipes and motivational stories.

You should definitely check them out!

 

2. Favorite Warm Weather Activity: Running Outside

Ok, I know it’s not REALLY warm yet. In fact, some days it still feels like winter out there. But every once and awhile the sun shines through the clouds and the winds stop blowing and it actually feels ok outside! Which of course is what motivates me to actually get out and run outside, because goodness knows if I think it might be cold then I wont go!

I’ve definitely had to start out slow, because I can really FEEL the 2 months that I took off from running. I still haven’t quite gotten my stride and my pacing back, but I’m still trying even if it isn’t coming back quite as easily as I had hoped!

 

3. Favorite Part of my New Job: Getting home to make dinner at a reasonable hour!

When I worked at my old job, I typically would not get home until at LEAST 7:30 at night. Which meant that then I would have to start dinner, and we often wouldn’t eat until at least 8:30.

Now I’m getting home much earlier (minus my almost 3 HOUR commute yesterday thanks to several bad accidents AND a road closed for construction), which means that I’m actually getting to eat dinner when the sun is still out! It’s a miracle!

4. Favorite New Thing to Search for on Pinterest: Crafty Ideas

Maybe it’s because I have had ZERO time lately to unleash my inner artist and do anything creative so I’m kind of craving it, but recently most of pins have been crafty ideas! I really don’t know where this came from, but there are just so many good ideas out there that I just cant help myself.

Here are some of the ideas that I’m obsessed with lately:

5. Favorite Current Read: The Paris Wife

I’ve been reading The Paris Wife for the past few weeks, and I’m totally loving it. It’s kind of a mix of a biography and a fictional story that looks at the marriage between Ernest Hemingway and his wife Hadley. I really wasn’t sure about it at first, but it had been recommended to me on several occasions so I thought I’d give it a try.

And now I’m totally engrossed in the story. It’s like watching one of those relationships that is constantly on the verge of total train wreck, but yet they are still totally in love with each other. Fascinating! I definitely recommend it!

(Fun fact: I actually HATED reading Hemingway books in high school. His writing style is totally NOT me, and drove me crazy.)

Enchiladas Three Ways

Boy has this week gone fast! Maybe it’s just because it’s been a week of totally new things for me, with my new job, new schedule, and new daily routine, so it’s going way faster than normal!

That probably wont last too long, so I’m going to enjoy it while I can!

What I am also really enjoying is how much time I have in the evenings now with my new job! If you follow me on twitter (@myfreckledlife), you may have seen my excited tweet last night about my new evening schedule:

 

It’s seriously awesome to have so much time in the evenings! Now if only I could get used to this SUPER early morning schedule, I’d be good to go!

Anyway, I thought I would share with you all a fun trio of recipes that I tried out earlier this week.

You see, I love me some Mexican food (anyone who has been around MFL for more than a week probably knows this. I have an addiction). But I’ve never actually made enchiladas before. True story. For whatever reason, they always intimidated me.

But I decided to bite the bullet this week, and try them out. Except even better, I couldn’t decide what kind to make, so I decided to make 3.

Truth: That was actually my game plan in case any of them failed miserably. Luckily, none of them did!

So let’s take a look at them, shall we?

Enchiladas Three Ways

Please note that these made about 3-4 enchiladas each. So feel free to increase each recipe to full size (x3) if you only want to make one.

1. Chicken, bean and bell pepper enchiladas

Ingredients:

  • 1 chicken breast, cooked and shredded
  • 1/2 onion, minced
  • 1/3 can of black beans
  • 1/2 bell pepper, minced (I used frozen mixed bell pepper)
  • 1/4 cup corn (I used frozen)
  • 1/4 cup of shredded mexican cheese
  • Olive Oil
  • Cilantro, chopped
  • Garlic salt
  • Cumin
  • Chili Powder
  • Dried Parsley
  • Red Pepper Flakes
  • Corn tortillas
  • Enchilada Sauce

 

Directions:

1. Saute onions, peppers and corn in olive oil until the onions are clear. Mix all ingredients together in  small bowl. Season with spices to taste.

2. Heat corn tortillas for a few seconds in the microwave. Fill tortillas with filling, wrap enchilada, and put face down in a baking dish with a layer of enchilada sauce on the bottom. Top with the rest of enchilada sauce.

3. Cook at 350 degrees for approximately 20 minutes. Top with cheese and cook for another 2 minutes. Let cool and serve.

 

2. Spinach and Bean Enchilada

Ingredients:

  • 1/2 onion, minced
  • 1/4 cup corn (I used frozen)
  • 1 small zucchini, chopped
  • 1/3 cup of black beans
  • Cilantro
  • 1 small handful of fresh spinach
  • Olive Oil
  • Cilantro, chopped
  • Garlic salt
  • Cumin
  • Chili Powder
  • Dried Parsley
  • Red Pepper Flakes
  • Corn tortillas
  • Enchilada Sauce

 

Directions:

1. Saute onions, zucchini and corn in olive oil until the onions are clear. Mix all ingredients together in small bowl. Season with spices to taste.

3. Bean and Sweet Potato Enchiladas

Ingredients:

  • 1 sweet potato, peeled and chopped
  • 1/3 cup of black beans
  • Cilantro
  • 1 small handful of fresh spinach
  • Olive Oil
  • Cilantro, chopped
  • Garlic salt
  • Cumin
  • Chili Powder
  • Dried Parsley
  • Red Pepper Flakes
  • Corn tortillas
  • Enchilada Sauce

Directions:

1. Cook sweet potatoes in boiling water for several minutes until cooked through. Drain and mash. Mix all other ingredients in a small bowl. Season with spices to taste.

2. Heat corn tortillas for a few seconds in the microwave. Fill tortillas with filling, wrap enchilada, and put face down in a baking dish with a layer of enchilada sauce on the bottom. Top with the rest of enchilada sauce.

3. Cook at 350 degrees for approximately 20 minutes. Top with cheese and cook for another 2 minutes. Let cool and serve.

Now, they aren’t the pretty looking things ever,  but they definitely were delicious. And they all taste SO different, that I really enjoyed having all of the options on my plate. We topped ours with greek yogurt and some more cilantro, and they were all amazing.

Although let’s be real here guys – if you put salsa/spicy sauce and cheese on it, I’ll probably thing anything is amazing. I’m easy to please.

WIAW: First Day Edition

Well it’s official guys – I’ve made it through my first day at my new job!

I don’t know about you guys, but I always am a mix of excitement and total terror when it comes to starting something new. For whatever reason I always have this total fear that I’m going to walk in and their going to go “oh… you’re not the person we wanted to hire. Nevermind!”

But luckily that definitely did not happen! I actually had an amazing first day, learned all about the kinds of work I’m going to be doing, and met a ton of nice people.

Although I forgot what it was like to walk around in heels for 8 hours! I’m going to have to get my feet used to this again!!

I have a feeling the next week or so is going to be a little crazy as I try to figure out a new schedule (which has me waking up MUCH earlier than before, but getting home several hours earlier too!), and how I’m going to fit in blog posting and working out. So bear with me, please!

Anyway, it’s Wednesday and I KNOW that you all know what that means. It’s time for What I Ate Wednesday!!

What is What I Ate Wednesday, you ask? Well it’s this awesome phenomenon created by Jenn at Peas and Crayons that allows us to share and celebrate our food, free from judgment or comparison. I love what it stands for, and the way we can all come together over something like our meals!

So without further ado, What I ate on Tuesday!

Breakfast

Pretty much the usual, but at I made a SMALL change. Baby steps, people. Oatmeal with peanut butter, TJ’s superfruit jelly, and a banana. With a cup of tea, of course.

Lunch

I’m not going to lie, I did NOT take a picture of my lunch today. We were all eating together in the break room, and I felt a little strange on my first day with my new co-workers taking pictures of my food. So here are some repeat pictures, but hopefully you get the idea.

I had a salad topped with buffalo chicken, feta, and some ranch dressing. And a black cherry chobani as well. Simple, but delicious!

Dinner

Chris and I had some errands to run after work (I had to take my ring in to the jewelers and then we had a Costco date), and by the time we left Costco both of our tummies were grumbling. So we decided to scrap our planned dinner and go out. Plus we wanted to celebrate my successful first day!

After about 5 minutes of debating (we are so indecisive), we finally decided on TGIFridays because it was quick and we hadn’t been in awhile.

We started out with some appetizers (spinach Florentine flatbread and potstickers), and then I had the cajun chicken and shrimp pasta as my meal. Definitely not the healthiest choice on the menu, but to be honest, nothing else was calling my name. And you know, I’m all about moderation. You gotta enjoy life sometimes too!

Overall, definitely not my healthiest of days. But again, sometimes it’s worth a little splurging.
