Greek Chicken Burger

Happy Tuesday everyone!

I don’t know what the weather was like where you are, but yesterday was like quintessential spring around here. Cold and dewey in the morning, sunny and warm in the early afternoon, and overcast and sprinkling all afternoon. Talk about confusing! I didn’t know whether to grab my jacket, my umbrella or my flip flops!

But hey, I’ll definitely take it over the snowy weather we’ve had in the past few months. I’m so over the winter! Bring on the sunshine and bright colors!

Anyway, I know I gave you all a bit of a teaser about it yesterday, but I made a delicious dinner on Saturday night that I wanted to share with you all!

Now I’m sure you all know the wonders of Pinterest at this point. And if you don’t, come out from under your rock and get on that immediately. Kidding, of course. About the rock part. I’m sure you live in a lovely home. But my Pinterest food board is basically my largest board (followed closely by my baking board and fashion board. I’m such a girl), so I am trying to make my way through it and try at least ONE new recipe a week.

This past week I wanted to try out a recipe that I just pinned recently for “Mini spiced chicken burgers with mint yogurt sauce”. Except that it was created by someone not from the US (I think they are from the UK… maybe? I could be totally off), so I didn’t have about half the ingredients. So I improvised and basically ended up making a TOTALLY new recipe!

Greek Chicken Burgers

Adapted from the Mini Spiced Chicken Burgers by Aapplemint.com

Makes 4 burgers

Ingredients (for burger):

  • 1 lb ground chicken
  • 1/4 onion, chopped
  • 1 tsp Greek seasoning (I mixed marjoram, oregano, basil, and thyme)
  • 1 tsp minced garlic
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp crushed red pepper

(f0r sauce)

  • 1/3 cup plain greek yogurt
  • 1/2 tsp lemon juice
  • mint, chopped (to taste)
  • pinch of salt

(f0r toppings)

  • whole wheat pitas (with pockets)
  • 1/2 cucumber, sliced thinly
  • feta

Directions:

1. Mix all ingredients for the burger together with hands until thoroughly mixed. Form into 4 small patties.

2. Grill on griddle on george forman until cooked through (usually 3-4 minutes)

3. While cooking, mix together sauce.

4. Remove burgers from heat, place in pita, and fill pita with sauce and additional toppings.

5. Enjoy!

    Have you ever tried a Salmon Burger? They are really tasty! I think Whole Foods makes them and sells them in the meat/seafood section but I’m sure they’d be pretty easy to make at home too 😀 Your turkey burger looks really good. I love how you put it in a pita pocket instead of a bun!

      I’ve never tried them, but I’ve heard of them before. I might have to test it out one of these times. And yes, I love pitas, but I never remember to buy them at the store! So much better than boring buns!
