Chicken and Sweet Potatoes in Peanut Sauce

Good Morning and Happy Tuesday!

Now, normally I despise Tuesdays. Definitely my least favorite day of the week. But I’ve decided to try and take a more positive outlook on Tuesdays, and just enjoy the fact that Tuesdays are usually one of the most chill days of the week.

So here is to a chill Tuesday, guys!

ANYWAY, Monday ended up being a much different day than I was expecting! I spent most of my day dealing with some drama at work with one of our clients (and here I thought we were out of high school…), until about 3pm when my boss fell down some stairs at work. It was wet and rainy and she apparently slipped on the step and down she went.

And then her ankle turned purple. So another coworker and I volunteered to take her to the urgent care to get it checked out. So while it was definitely important to get her taken care of, there went my afternoon productivity.

Chris ended up picking me up from the Urgent Care place (ok, technically I ended up next door at Tropical Smoothie) so we could head into DC for the evening to me up with his dad, who was in town for the day, for dinner.

We ended up going to the Lebanese Taverna in Pentagon Row (for any of those Washingtonians out there), which was seriously delicious. I ended up getting the chicken kabobs, although I borrowed some of Chris’ yogurt sauce to put on top because it was to die for!

We ended up chatting away the evening and didn’t get home until like 10:30pm. Which pretty much meant straight to bed for us old people.

 

Chicken and Sweet Potatoes in Peanut Sauce

Because it’s a positive, happy Tuesday, I do have an exciting recipe to share with you all today!

Chicken and Sweet Potatoes in Peanut Sauce

Original Recipe from Clean Eating

Makes approx. 4 servings

Ingredients:

  • 2 chicken breasts, cut into 1 inch cubes
  • 2 sweet potatoes, peeled and cut into 1/2 inch cubes
  • 1/4 cup peanut butter (I used all natural)
  • 1/4 cup light coconut milk
  • 2 tbsp rice vinegar
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp honey
  • 1 tbsp fresh lime juice
  • 1 tbsp minced ginger (I used about 1/2 tbsp powdered ginger)
  • 1 tsp reduced sodium soy sauce
  • 1/2 tsp red pepper flakes
  • 1 tsp minced garlic or 1 garlic clove, minced
  • 12 oz green beans
  • 1 red onion (I used white, because it’s what I had on hand), sliced
  • olive oil spray

 

Directions:

  1. Preheat grill to medium-high or oven to 450 degrees.
  2. In a medium bowl, mix together peanut butter, coconut milk, vinegar, cilantro, soy sauce, honey, lime juice, ginger, garlic and pepper flakes.
  3. Cut up 4 12×16 inch sheets of aluminum foil, and spray with olive oil spray. Divide green beans, sweet potatoes, onion and chicken between sheets. Top with peanut sauce. Fold foil to seal.
  4. Place foil packets on a grill or on a baking sheet in the oven. Cook for 25-30 minutes. Open one packet if needed to check for doneness.
  5. Remove from heat, top with fresh cilantro and enjoy!

Guys, this recipe was super easy and SO full of flavor. The hardest part, honestly, was chopping up all the veggies and chicken beforehand. But once that was done, it was super quick to toss it all into a tin foil wrap and place it on the grill. At first I wasn’t sure there was going to be enough peanut sauce, but it really infused into all of the chicken and veggies and gave everything a nice, slightly spicy, nutty flavor.

And I think there is so much that you could do to customize a meal like this. Trade out the veggies or the meat source. Or even do a different kind of sauce. There are so many options!

I think this is definitely going to go on our list of “summer grill” meals!
