Summer Vegetable Lasagna

This was a LONG time coming, guys. In fact, I think I promised it to you in like February. Yea, it’s bad. It just ended up taking 1000x longer than I ever thought it would, and I ran into a whole lot of road blocks along the way.

In fact, here is a SUPER shoutout to my husband, the amazing computer engineer, who basically ended up doing a good chunk of the finalizing stuff for me yesterday because the computer stuff was WAY over my head!

I’m sure there are going to be a few kinks and issues to deal with in the next few days, so please bear with me as I get everything 100% completed!!

 

Summer Vegetable Lasagna

Since my focus was on getting the ole blog fixed up yesterday, I don’t really have too many exciting things to tell you about my day. Except about what I ate for dinner.

I got the inspiration for a summer veggie lasagna from Iowa Girl Eats and her Famer’s Market Lasagna. Except I wanted to tie in this bad boy that we purchased (kind of on a whim) from the farmers market this week: fresh goat milk ricotta.

Guys, this stuff is dreamy. It’s got the creamy consistency of ricotta with a nice goat cheese kind of flavor. Heaven.

The lasagna recipe itself is pretty basic, but I loved incorporating some of the fresh veggies we also picked up at the farmers market this week. You could really put in any of your favorite summer veggies (or change it up for fall) and make it your own. Chris also suggested adding in some spicy turkey sausage for an extra kick as well.

Summer Vegetable Lasagna

Adapted from Farmers Market Vegetable Lasagna via Iowa Girl Eats

Makes 6-8 servings

Ingredients:

  • 10oz lasagna noodles (approximately 12 noodles)
  • 2 large shallots, chopped (or 1 small sweet onion, chopped)
  • 4 garlic cloves, minced
  • 1-2 medium zucchini, chopped
  • 1-2 medium yellow summer squash, chopped
  • 24oz favorite pasta sauce
  • 24oz ricotta cheese (I used a mix of goat milk and regular)
  • 1/2 cup packed fresh basil, chopped
  • shredded mozzarella cheese
  • olive oil
  • salt & pepper

Directions:

  1. Add lasagna noodles to a large pot of salted, boiling water. Cook until al dente then drain and set aside. Spray with olive oil if you need to stack them.
  2. Heat olive oil in a very large skillet over medium heat. Add shallots and saute until translucent, approx. 3-4 minutes, then add garlic and saute for 30 seconds.
  3. Add zucchini and squash, season with salt and pepper, and saute until just slightly starting to turn translucent, approx. 4-5 minutes. Add pasta sauce and turn heat down to medium/medium-low, then simmer until zucchini and squash are tender, 5-7 minutes.
  4. In a large bowl combine drained ricotta cheese and chopped basil then set aside.
  5. Preheat oven to 350 degrees then spray a 9×13″ pan with non-stick spray. Spread a small amount of the vegetable/sauce mixture into the bottom then layer in 3 cooked lasagna noodles followed by 1/3 of the ricotta cheese mixture and 1/3 of the remaining vegetable mixture. Repeat layers 2 more times.
  6. Sprinkle shredded mozzarella on top then cover pan with foil and bake for 20 minutes. Remove foil then bake for an additional 15-20 minutes, or until golden brown and bubbly.
  7. Enjoy!

I actually made this ahead of time on Sunday afternoon and kept in in the fridge. It was super easy to grab and drop in the oven on a weeknight. I definitely devoured a nice big slice after getting home from my favorite butt-kicking Cardio, Strength and Intervals class that had me sweating like a beast.

One Whole Year!

Happy Thursday friends!

Today is a very special Thursday here at My Freckled Life, because we are celebrating a BLOGIVERSARY!

That’s right, MFL is officially 1 year old today!

I had been reading blogs for several years before I really decided give creating my own blog a shot. You can read my super embarrassing and awkward first post here (and see pictures of baby Laney!).

When I first started I didn’t tell ANYONE about it – not even Chris for a good month or two. I had no readers and it was solely a blog for me. See, I have this known habit of starting something and never actually following through – so I had to make sure I was actually going to keep it up before I shared it. But slowly it’s grown and morphed and grown some more. It’s like a teenager now!

2012 was a huge year for me (which I recaped at the beginning of the year) and I’m so happy that I was able to document and share everything with you all!

So instead of looking back through the year (since I just did that), I thought instead I’d share with you all a few fun facts about My Freckled Life!

After the Home Page and the About Me page, MFL most popular post was on called Driving the Struggle Bus from last May, where I discussed My Big Fat American Gypsy Wedding (amongst other things).

The second most popular post was WIAW: Kryptonite Edition which included a lively discussion on cheeze-its. You should check it out.

One of my favorite posts from early on which I feel like lots of new readers missed out on was the time that I became Country and spent the afternoon at a dairy farm. Anyone who knows this city girl knows that this was an EXPERIENCE. Let’s just say I didn’t know what a baby cow was called before this. It’s a calf, just FYI. I’m country now.

Most Popular Country

What I like about using wordpress is that it lets me see statistics – who came to my page, where they came from, if they left comments, etc.

But one of the things that I find most interesting is the country list, where it tells me what country my readers are from. While 4 of my top 5 might be expected (The US, Canada, UK, and Australia), my #4 totally took  me by surprise! Germany!

I guess they enjoy hearing about my German husband!

Most Popular Google Search

The other best thing to look at is the google searches that lead people to my blog. Sometimes I don’t quite understand how google leads them here, but it does… Check out some of these:

* Face Licking (Why yes, I do enjoy a good face lick every now and again?)

* Being blind sucks (That is accurate, it probably does suck)

* Freckled Booty (Pretty sure I’ve never commented on my rear end here on MFL, but in case you want to know, yes my booty is freckled too.)

* I Hate Pink (I am actually pretty pro pink. Sorry google searcher, the almighty google lead you astray)

* Eat My Arm (…no thank you?)

* Yay, I’m a champion (Ok, I’m kind of glad this one lead you here)

And my personal favorite:

* dominican dj mowing lawn (I don’t even have any guesses as to how this got you here…)

 

But the all time leading google search, hands down? Struggle Bus

So where are we going from here?

Over the past year MFL has definitely gone through a lot of growth and changes. I’m happy to say that I’ve gotten much more involved in the blogging community (wonderful people!) and in social media.

But I have a lot of new ideas for this blog, so don’t be surprised to see some a-changes coming! Some probably in the very near future!

I wont spoil the fun and ruin the surprise, but let’s just say that I’m working to turn my little teenage blog into a young adult. Complete with a facelift and some new connections in the blog world.

I’m both excited and terrified.

But here’s to you, My Freckled Life – Happy Blogiversary and may year 2 be even better than year 1!
